Absolutely delicious, easy and simple to prepare, perfect for dessert, evenings or weekends!

Pre-heat oven to 170°C / 150°C Fan / 325°F
Place all ingredients (except the dried fruit) into a large mixing bowl and beat well together (but don't over mix)
Once everything is mixed together, add the fruit and stir by hand to not break down the fruit
Carefully spoon the mixture into lined 2lb loaf tin
Bake for 1 hour 15 minutes. (But may need longer depending on how wet your mixture is)
