These are really delicious cookies to enjoy on their own or with a cool glass of milk :-)

Wet Ingredients
 5 oz Unsalted butter (soft)
 6 tbsp Sugar
 1 Egg (medium)
 ½ tsp Vanilla Essence
Dry Ingredients
 225 g Plain flour
 ½ tsp Salt
 ½ tsp Bicarbonate of Soda
 ½ tsp Cream of Tartar
Coating
 ½ cup Sugar
 1 tbsp Ground Cinammon
For the cookie

Preheat the oven to 180°C

Cream together the sugar and the butter by pressing the sugar into the butter with a bendy spatula, once it is combined and looks fluffy add the egg and the vanilla, mix until it forms a soft dough.

Sift all the dry ingredients together and add to the soft dough, mix gently with the soft spatula until well combined.

Coating

Mix the 1/2 cup of sugar and the spoonfull of cinammon in a bowl. Form balls about 2 1/2cm in diameter and roll them in the cinammon sugar, place the balls in a lined baking tray leaving a 10cm gap in between each of them, then press each ball with the palm of your hand to flatten to 1cm height.

Bake in the preheated oven for 15-18 minutes, transfer immediately to a cooling rack and when cool, enjoy!
